Agree with Alfa. Also, a spiral ham is easy and versatile.

Chili... can do a couple different kinds and serve alone with toppings or add baked potatoes and/or hot dogs

Another vote for baked ziti (keep warm in sterno pans) or chili (in crockpots).

Maybe, I'll do a lazy lasagna. Use prepared cheese tortellini and frozen meatballs. It's not for company. Just don't want to have to cook all weekend.

Sloppy joes are becoming a big thing at the catering business lately.

That's a good idea. I have made that before but forgot about it.

Get a sirloin tip or top round or bottom round roast (I get whatever is on sale) as big as the crockpot will fit. Add a packet of Good Seasons Zesty Italian dressing, an undrained jar of sliced pepperoncini and a can of beef consomme. You can also add drained giardinnera (sp?) if you know your guests love spicy, but for a crowd I would just have some there for people to add to their sandwiches. Cook on low 6 to 8 hours, until very tender, then shred with 2 forks. I love this stuff! I make it every Christmas.

Nobody has mentioned a Taco Bar? Mom did baked ziti and lasagne for Christmas to feed her crowd and it was perfect. We've also done a few types of chili in crock pots (so easy.)

Second the Italian beef! I served for a crowd with mini sub rolls, shredded mozzarella and more peppercini if anyone wanted

If you have an Instant Pot, the Kalua Pig recipe is awesome and feeds my husband and I for several meals.

Chili and taco bar. I like that you can make large quantities for a lot of people, but can still personalize to taste with different toppings/add-ins.

Salsa chicken was a huge hit this Christmas with my father's family. I am sure you know how to do it, but... Boneless, skinless chicken breast in the bottom of the crock pot, dump in two cans of drained/rinsed black beans, two jars of salsa, a bag of frozen corn and cook on high for four to six hours. Pull out the chicken breast and shred with two forks, then return to the crock pot.
You can serve it with tortilla chips, tortillas or taco shells, over rice, etc. I also had sliced avocado and sour cream available.

I recently did a big beef stew in the crock pot. It easily would have fed a crowd.

I think you could do the whole 16 oz. I have never seen prpperoncini in a can, only a jar.

You can do a stew or a pot roast in the crockpot with just a can of jellied cranberry sauce and a small jar of prepared horseradish. It's the best tasting sauce ever. Good over noodles or mashed potatoes.
