Pumpkin Spice Bundt Cake From: Cooking Light Magazine - Oct'97 Serves: 16 (248 Calories 6g Fat 1g Fiber)
3-1/4 cups all-purpose flour 1 Tbsp baking powder 2 1/2 tsp ground cinnamon 1 tsp baking soda 1 tsp ground nutmeg 1/4 tsp salt 1-1/2 cups pumpkin puree, fresh or canned 1/2 cup applesauce 1-1/2 cups granulated sugar 1/2 cup stick margarine, softened 3 large egg whites 2 tsp vanilla extract 3 Tbsp brown sugar (dark or light) 1 Tbsp dark rum 1 tsp skim milk 3 Tbsp powdered sugar
Preheat oven to 350F. Combine first 6 ingredients; set flour mixture aside. Combine pumpkin and applesauce; set aside.
Beat granulated sugar and margarine in a large bowl at medium speed of a mixer until well-blended (about 5 minutes). Add egg whites and vanilla, beating well. Add flour mixture to sugar mixture alternately with pumpkin mixture, beginning and ending with flour mixture.
Pour batter into a 12-cup Bundt pan coated with cooking spray. Bake for 50 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes; remove from pan.
Combine brown sugar, rum, and milk in a small saucepan, and cook over low heat until brown sugar dissolves. Remove sugar mixture from heat, and add powdered sugar, stirring with a whisk. Spoon glaze over warm cake.
The rum glaze will seep into the cake if it's spooned over it while the cake is still warm.

They year they invented Funfetti, I insisted my birthday cake be Funfetti. I was in college and my roommates obliged. It was FAB.

patty Have you made this? I think my family would like this one. I haven't but the recipe is from CrissyBear's Family Recipe Box. She used to post on the Recipe Review Board of WWers. All of her recipes that I have tried have been really great!

Monkey's Pumpkin Muffins 1 c. whole wheat flour + 1 c. oats or 2/3 c. each whole wheat flour, oats, white flour 1 1/4 t. baking powder 1 1/4 t. baking soda 1/2 c. sugar 1 t. cinnamon ¾ t. cloves ½ t. nutmeg 2 T. oil 1 c. buttermilk or soy milk with a T. of vinegar or lemon juice replacing a T. of the soy milk 1 large egg or 2 T. water with 1 T. ground flaxseed, let sit to gel 15 oz. canned pumkin 1 c. butterscotch chips or golden raisins (opt.) ½ -1 c. chopped walnuts (opt.) Grease 21 muffin cups Preheat oven to 400 degrees Mix wet Mix dry Add dry to wet Add chips or raisins & nuts Fill cups 2/3 full Bake 15-20 min. Microwave: 6 oz. custard cups, half full, 80% power for 1 min. each, makes about 9

I saw that on Chopped! The CherPumple.
It's an apple pie, a pumpkin pie and a cherry pie, each baked into a cake and then stacked into one mega cake and frosted. It's obscene in every way.

I saw a version of pieducken on Facebook yesterday that was pecan pie topped with pumpkin pie topped with spice cake, with caramel frosting (I think) between them, and apple pie filling and marshmallows on top. Insane.
I need to save about everything in this post to pepperplate tomorrow, as I am mostly dairy-free and this stuff all sounds great.

All-in-one Holiday Bundt Cake
2 cups all-purpose flour 2 teaspoons. baking powder 1/2 teaspoon baking soda 2 teaspoons ground cinnamon 1/4 teaspoon freshly grated nutmeg 1 Pinch salt 1 1/2 teaspoons grated fresh ginger (or 1 tsp. ground ginger) 1 1/4 sticks unsalted butter -- (10 tablespoons) at room temperature 1 cup sugar 1/2 cup packed light brown sugar 2 large eggs -- at room temperature 1 tsp. pure vanilla extract 1 1/4 cups canned unsweetened pumpkin puree 1 large apple -- peeled, cored and finely chopped 1 cup cranberries -- halved or coarsely chopped 1 cup pecans -- coarsely chopped Confectioners' sugar -- for dusting, or maple syrup icing
Center a rack in the oven and preheat the oven to 350 degrees. Butter a 9- to 10-inch (12-cup) Bundt pan. (If you have a silicone Bundt pan, there is no need to butter it.) Don't place the pan on a baking sheet -- you want the oven's heat to circulate freely through the Bundtsinner tube.
Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, salt and ground ginger, if you're using it (not the grated ginger).
Working with a stand mixer, preferably fitted with a paddle attachment or with a hand mixer in a large bowl, beat together butter and sugars at medium speed until light and fluffy. Add eggs 1 at a time, and beat for 1 minute after each addition. Beat in the vanilla. Reduce mixer speed to low and add pumpkin, chopped apple and grated ginger, if you're using it. Do not be concerned if the mixture looks curdled. Still on low speed, add the flour mixture, stirring only until incorporated. With a rubber spatula, stir in the cranberries and pecans. Scrape batter into Bundt pan and smooth top with a rubber spatula.
Bake 60 to 70 minutes, or until a thin knife inserted into the center of the cake comes out clean. Transfer to a rack and cool for 10 minutes before unmolding, then cool to room temperature on the rack. Just before bringing the cake to the table, dust with confectioners' sugar. Alternatively, drizzle with maple syrup icing.
Note: For maple syrup icing: Sift 6 tablespoons confectioners' sugar into a bowl. Stir in 2 tablespoons maple syrup. Add more maple syrup, little by little, until you have an icing that runs nicely off the tip of the spoon. You might need another 1/2 tablespoon syrup to get the right consistency. Put the cooled cake on a sheet of wax paper and drizzle icing from the tip of a spoon over the cake. (Sprinkle top with chopped pecans, if desired.) Let the icing set for a few minutes before serving.

What the hell? recipe please! Just Google Piecaken! I also have a fantastic gingerbread cake with salted caramel sauce but that mAy be more for Christmas I don't celebrate Christmas, so lay it on me! Thanks again, folks, now I have to make some decisions.
