it does not need to be diet friendly. I have a couple I have made before but I can't replicate my mother's, a recipe she did not pass on, sadly. Thanks in advance!

I don't use a recipe; I just do it the way Google suggests: "Shrimp scampi has to be one of the easiest ways to quickly prepare shrimp. We simply sauté the shrimp with garlic in butter and olive oil, splash it with some white wine, let the wine reduce while the shrimp cooks, and then toss it with fresh parsley, lemon juice and black pepper." Mine is similar to Connies except no wine and no pepper and only add the chopped parsley and lemon juice once it is off the heat.

I do butter, oil, salt and a ton of garlic. I add white wine and a tish of shallots. I cook the shrimp in same and add extras to make enough sauce to go over linguini. Parsley, lemon and pepper are finishing touches.
