I'm looking for variations of Kale salad. Have made it twice and am still searching for my favorite ...
I've been making it for one serving until I can find the variation I like best...
Tear Kale from stems into small pieces (2"x2") --massage each piece gently with olive oil and salt (using about 1 tsp olive oil) Then rinse in colander.
Add: 1 T nuts (have use pecans/almonds) 1 T cheese crumbles (Feta or blue cheese--I preferred the blue cheese) 1 T cranraisins (I used 1/2 cup blueberries and liked it better) 2 T cooked quinoia Toss in 1T honey mustard dressing (I used Newman's Light)
I have a friend who makes a week's work... need to find out how she stores it for that long.

Quinoa Kale stores really really well. That is one of the bonuses.

I don't have a specific kale salad, but I usually start by tearing up kale in a bowl, then dicing a chunk of avocado and massaging it into the kale with my hands, mushing it up & evenly distributing it. After it has set 10 minutes or so the avocado oil softens up the kale so it's not so tough and no other dressing is needed. I usually top it with whatever is in the fridge.
