I have a huge batch of cherry/grape tomatoes that I grew this way in a big pot: As the tomatoes were getting older and wrinkly, I cut them in half and buried their faces face-down in a large pot of dirt. I should have thinned them out, but didn't and now I have a jungle of tomato plants. We've been eating them in salads and this morning I roasted a batch of them.
I mixed up this marinade, cut the tomatoes in half, mixed them up in the marinade and roasted them on parchment paper for about 12 minutes at 450:
1 tablespoon of olive oil 2 tablespoons of balsamic vinegar 2 minced garlic cloves 2 teaspoons brown sugar Chopped oregano and basil from my herb garden
They are delicious. A little sweet and needed the addition of salt.
Next batch I'm just going to do the basic roasting recipe -- olive oil, kosher salt, and pepper.

I made some really simple green beans the other night and I gobbled them up they were so good. I steamed them in the bag (I bought pre-snipped in the bag you can steam in the micro). while that was happening I melted butter and EVOO in a pan and threw in piles of minced garlic - like a LOT of minced garlic. then I threw the steamed green beans in, shook in a lot of Penzey's Sunny Paris and devoured them like I had never had green beans before.

Chopped Green Bean Salad with Manchego
1 1/4 pounds green beans, trimmed and cut into 1-inch pieces 6 ounces Manchego cheese*, divided 1/3 cup red wine vinegar 1 shallot, peeled and cut up 1/2 teaspoon salt 1/4 teaspoon pepper 1/3 cup extra-virgin olive oil 3/4 cup almonds, toasted and chopped 3/4 cup golden raisins 2 cups cooked farro**
In a large pot cook green beans in lightly salted boiling water for 4 minutes or until crisp-tender. Transfer beans with a slotted spoon to a bowl half-filled with ice water to stop cooking; drain and set aside. Meanwhile, finely shred 1 cup of the cheese; cut remaining cheese into bite-size pieces.
In a blender combine the vinegar, shallot, salt, and pepper. Add the shredded cheese and olive oil; cover and blend until well-combined and creamy. In a large bowl combine the cooked beans, dressing, cheese pieces, almonds, raisins, and farro. Toss to combine.
Substitute Asiago or Parmesan cheese for the Manchego, if desired.
For 2 cups cooked farro, in a medium saucepan combine 3/4 cup uncooked farro and 1 1/2 cups water. Bring to boiling; reduce heat. Cover and simmer for 30 minutes or until tender. Drain, if necessary.
Per serving: 522 kcal cal., 33 g fat, 44 g carb., 8 g fiber, 16 g sugar, 16 g pro.

steam them in advance and then at the last minute throw them in a really hot skillet with olive oil,lots of crushed garlic and salt, pepper, onion powder, dill (basically my favorite seasoning blend which I make myself). I just stir that around till hot and some of the beans are blistered. Everyone scarfs them up. Make sure to pat the beans dry before throwing them in the hot oil. And turn on the stove vent.

Green Beans Swiss Style
2 T. butter 2 T. flour 1 t. salt 1 t. sugar 1 T. grated onions
Sauté onions in margarine. Add other ingredients. Stir in 1 c. sour cream; cook until thick. Stir in 4 c. French style green beans (drain first)—about 2 cans Pour into a BUTTERED casserole. Top with ½ c. grated Swiss cheese Top with 2 c. crushed corn flakes mixed with 2 T. melted margarine (use less corn flakes).
Bake 20 minutes at 400 if warm; 40-50 minutes if casserole has been refrigerated

My family usually does this with Brussels sprouts, but it would work with green beans too. Just cook some bacon, add sweet onions and garlic, and the green vegetable. I also like green beans with lemon and butter sauce (or broccoli done like this too).
