Cherry Nut Pudding (it's a CAKE!)
1 can SOUR pitted cherries, well drained
2 cups sugar
2 cups flour
2 eggs
1 tsp vanilla 1 tsp baking soda
1 cup chopped walnuts
Mix all ingredients. Pour into a well greased tube pan.
Bake at 350 for 45 minutes.
Cool on rack completely before removing from pan.
Use a knife or thin spatula to separate from sides of pan.
It may be difficult to remove.
(She wasn't kidding - the first one I made came out in 3 pieces. I have since bought a solid tube pan with lower sides, and I'm hoping that will work better, as it isn't very tall)
ICING
Heat 1 cup milk, whisk in 3 heaping tablespoons of flour, cook to a pasty consistency.
Let cool, the add:
1 stick softened butter
1/2 cup sugar
1/2 cup Crisco or other vegetable shortening
1/2 tsp vanilla
Red or green food coloring if desired
Beat with an electric mixer for 5 to 7 minutes on high.
(original instructions state "beat like hell"!)
Frost cake and serve.
