Oven-baked Pancakes (Dutch Pancakes)
2 eggs 1 cup cottage cheese 2 tablespoons flour (white or whole wheat) 1 tsp baking powder
Preheat oven to 400. Line a 9 X 13 pan (or two 8 X 8 pans) with parchment paper. Spray with non-stick spray. (They stick badly otherwise. Do not substitute wax paper.)
Blend all ingredients in a food processor. Spread batter evenly in the pan.
Bake 10-12 minutes or until nicely brown.
Makes 2 servings. I like them sweetened a bit and dusted with cinnamon, or you can eat them with a savoury topping.
Good leftover, either cold or reheated in the microwave. They keep for a week in the fridge and freeze well. I triple the recipe, but be careful not to overflow your food processor.
