This mix is for the recipes to follow. Or it can be used generally - my son puts a bit in his scrambled eggs!
Vindaloo spice mix ¾ cup paprika 6 Tbsp cumin ¼ cup ground cardamom 2 Tbsp cayenne pepper 2 Tbsp ground cloves

Unlike most vindaloos, this is not a hot one. Vindaloo 4 pounds meat (stew beef, shank or chicken thighs) vegetable oil (e.g. canola, not olive) ¼ cup vindaloo spice powder* mixed with ¼ cup water 4 medium onions, chopped 3 TBSP garlic cloves, minced (~ 8 cloves) 1 small can tomato paste (156 ml) 3 TBSP wine vinegar 2 TBSP mustard seeds (preferably black) 3 bay leaves 2 tsp sugar 1 ½ tsp salt
1. Brown the meat in vegetable oil. This may be optional for the chicken.
2. Mix the vindaloo spice with water to make a thick paste. In a small pan, heat it briefly with vegetable oil over low heat until fragrant. It burns easily.
3. In a Dutch oven, combine the meat, browned spices and all other ingredients. Cover and bake at 350F for 3 hours (for beef) or until meat is very tender.
* 2 TBSP paprika, 1 TBSP cumin, 2 tsp cardamom, 1 tsp cayenne pepper, 1 tsp cloves

Vindaloo Meatball variation Meatballs: 1.33 kg lean beef 1.5 cups crumbs or equivalent French/Italian bread, soaked in enough milk that it all absorbs, about 3/4 cup 1 tsp salt ½ onion chopped fine (optional) 1 Tbsp Vindaloo spice 1 egg
1. Combine all ingredients and make ~ 44 1” meatballs. Bake at 425 for 20 minutes in 2 9”x13” pans.

3. In a Dutch oven or cooking pot, combine the meatballs and any juice in the baking pan, browned spices and all other ingredients from recipe above. Add a cup of water. Cover and bake at 350F for 30 minutes in oven, or cook on stove top, until bubbly and the onions are done.
