This is my mother in law's recipe. Well loved.
Mary's sausage stuffing 1 pound sausage meat, broken up and browned slightly in a frying pan 1 onion, chopped fine and fried up with the sausage meat
To this, add
1/3 cup lemon juice combined with
1 1/2 cups chicken broth (Omit the chicken broth if you are using it to stuff a bird, since the bird juices will replace the broth)
Pour this over
1 loaf stuffing bread (pre-spiced), cut into cubes. If it isn't stale, toast the cubes or slices in a 300 degree oven for 20 minutes to dry it out (so it soaks up the liquid better).
Mix it all up and put it in a crockpot. Cook on high for about 3-4 hours (less time for one of the older, hotter-running crock pots). Makes a lovely crust around the sides.
In Canada, sausage meat (Maple Leaf brand) comes in one pound chubs, frozen, near the frozen turkeys during holiday times. Also, around holiday times we can buy stuffing bread that is already spiced with poultry seasoning (sage etc.) If not available (or sold out!) just add some poultry spice or sage to taste, maybe half a teaspoon.
