I used to get carrots from the farmer's market and you are right. they're in a class by themselves - usually more sweet and earthy than the store bought ones.

Here's one of my favorite concoctions:
Trader Joe's Organic Tomato & Roasted Pepper Soup Trader Joe's Soyrizo, browned and crumbled Bertolli Spinach and Cheese Tortellini
Per 1-1 1/2 c serving of soup I add 2-3 Tbs Soyrizo crumbles and 2 oz (weighed before cooking) of cooked tortellini.
I also love sauteeing onions, mushrooms, broccoli slaw, baby bok choy, snow pea pods, savoy cabbage or any combo thereof and adding Trader Joe's Ginger Miso Broth. Throw in some brown rice, or some Trader Joe's Mini Cilantro Chicken Dumplings.

I'm sort of in the mood for lentil soup. Onion, carrot, celery, rice, lentils, can of tomatoes, chicken (or veg) broth, cumin.

Crockpot Split Pea Soup. ×/- 7 cups 16 oz dry split peas, rinsed 1 C carrot, diced 1 C onion, diced 2 ribs celery including leaves, chopped 2 cloves garlic, minced 1 bay leaf 1/4 C parsley, chopped 1 tsp salt 1 tsp pepper 6 C fat free, low sodium chicken broth Put all ingredients in crockpot, in the order listed above. Cover, cook on high 4-5 hours, low 8-10 hours Servings size 1 Cup-2 WW Smart Points My notes: Can add cooked, diced lean ham (amt added will determine new points value) I use the Trader Joe's prechopped mirepoix if I'm especially lazy. DO NOT SKIP THE PARSLEY!!! I puree with an immersion blender-DO NOT FORGET TO REMOVE THE BAY LEAF FIRST! This is a great Core/Simply Filling recipe. Freezes well-I portion out single servings into ziploc bags, lay flat on half sheet pan to freeze. I serve with a drizzle of lemon infused or chile pepper infused olive oil. I love Split Pea! Going to try this. Yummmm

The only thing in my crisper drawer is the Sierra Mist I am hiding from The William because he is not allowed to have it anymore...and lord knows he would never look for anythng in a drawer marked "Veggies".

Skinnytaste chicken barley soup. I made it yesterday and we had it for dinner tonight. Yummy and freezes well. Also skinnytaste.com beef, tomato, and acini de pep soup- yum!

Midwest chowder is my favorite fall soup . Not weight watchery though. Check out the recipe from Kraft foods, it's the same I use

(Please don't tell me you don't care for pea soup...) I LOVE it. My grandma used to make it for me every day before I got on the afternoon kindergarten bus. My husband hates it Split pea soup sadness.

I made an Italian Sausage and Cheese tortellini soup. I kind of improvised based on some other recommendations. It has:
4 cheese tortellini (I used Louisa brand) 3 cloves of garlic 6 cups of broth made from Penzey's chicken base 3 tbsp fresh chopped parsley 1 lb italian sausage 2 stalks of celery 2 carrots, peeled and sliced Fresh baby kale and spinach 1 onion 1 diced red pepper 1 can petite diced tomatoes (I forgot to buy some) Italian herbs, salt and pepper to taste
It's delicious. I bought some freshly shaved parmesan to top it with.
