Pizza Spaghetti Squash Casserole500 g ( 1 pound) Italian sausage meat (3 Costco-size sausages) 1 clove garlic chopped (optional) some sliced onion (optional) 1.6 kg or 3.5 lb spaghetti squash (4 cups cooked) 3 cups tomato sauce 2 large eggs 2 Tbsp Italian spice or more 2 1/2 oz pepperoni 1/2 cup shaved Parmesan 3/4 cup thinly sliced Mozzarella Roast sausages along with a sliced onion, in same 350 oven as squash halves. Sausage takes maybe 20 minutes. Squash halves take over an hour and need to get really soft. Chop roasted onion. Chop sausages in pieces no bigger than a big olive. In a big bowl combine tomato sauce, sausage, onion, beaten-up eggs, spice. Cool squash somewhat, then discard seeds and seed goop, and crush the halves to remove spaghetti stuff. Add spaghetti stuff to tomato mixture. Spread in 9 X 13 pan. Layer cheese on, then add pepperoni on top. Serves 6 generously.

I make something similar all the time. I microwave the squash, put the two halves slightly overlapping, face down in a ceramic pie plate, add a tbsp or two of water, cover with plastic wrap, and wave for about 8-10 minutes. I also don't use pepperoni but do usually brown the onions, garlic, and some sliced mushrooms in a sauté pan before using them. Oh, and no eggs.
The original recipe called for layering like a lasagna, but that fell by the wayside pretty quickly. These days I just scrape the spaghetti squash into a baking dish, top it with the sausage & browned veggies, pour sauce over it, throw fistfuls of grated cheese over the top & put it in the oven. If I'm feeling fancee I may turn the broiler on at the end of a couple of minutes to brown the cheese on top.
