Oatmeal muffins
1 ¼ cups flour 1 ¼ cups old-fashioned (large flake) oats ¾ cup sugar 2 teaspoons baking powder ½ teaspoon baking soda 1 teaspoon ground cinnamon 1 cup raisins or chopped dates or chocolate chips (optional but good) ½ cup chopped walnuts (optional but good)
2 eggs ½ teaspoon salt ¾ cup milk ¼ cup any vegetable oil 1 teaspoon vanilla
1 tablespoon sugar mixed with ½ teaspoon cinnamon (optional topping)
1. Adjust oven rack to middle position and heat oven to 375 degrees. Lightly grease 12-cup muffin tin, or spray with non-stick.
2. In a large bowl combine dry ingredients.
3. In a separate bowl, beat egg with salt until yolk and white are combined, then stir in remaining liquid ingredients.
4. Add liquid mixture into dry mixture all at once, then stir until just barely combined. There should still be a few floury lumps. Sprinkle top of muffins with the cinnamon sugar mix.
5. Bake for 20 minutes or until nicely brown on top. A toothpick stuck in should not come out with dough on it.
